One distillation method

Each of our blends reveals its own distinctive profile.
We tailor our distillation method to the grapes and terroirs we use, to better accentuate our cognacs’ aromas. We modulate the proportion of the fine lees naturally present in the wine in our distillation: either to add power and richness or maintain aromatic subtlety. Currently we use three different levels; racked fine lees (0-2%) for purity and subtlety, natural fine lees (2-6%) for expressiveness and finesse, and added fine lees (7-15%) for power and structure.

One grape

We use just a single grape variety in our eaux-de-vie.
Naturally we work with the Ugni Blanc grape, the Cognac region’s flagship variety, but also with Folle Blanche, a rare, historical grape that produces delicate, expressively aromatic eaux-de-vie

One growth

Each of our cognacs bears the stamp of a single Cru,
giving it a distinct, assertive character. We offer cognacs from the prestigious terroirs of Fine and Petite Champagne as well as from the “Bois ordinaires cru “, in the Oléron Island, the least well-known soil of the Cognac region.

Non-chill filtration

We do not chill-filter our eaux-de-vie so that we can preserve their balance and aromatic complexity.

Elaboration without additives

We prohibit any additives to preserve the character and purity of our spirits.We do not add caramel.

The right alcoholic strength

We determine the precise alcoholic strength for each of our Cognac to the nearest 0.1% for each of our eaux-de-vie to express more clearly the potential and organoleptic qualities of our blends.
