Le Singulier is a highly aromatic, expressive cognac due to the gentle exuberance of a rare grape – the Folle Blanche.


A single growth: Fine Champagne. Well-known in the Cognac region, producing rich, complex eaux-de-vie.

A single grape: Folle Blanche, a rare, traditional variety with remarkable aromatic intensity.

A single distillation method: Wine fine lees: natural. A balance of aromatic expressiveness and finesse.

Tasting notes

This cognac is the product of fine eaux-de-vie from the Fine Champagne growth and the highly distinctive Folle Blanche grape. The blend has an attractive copper-yellow shade. The nose is, at first, subtle and precise. On swirling, fruit notes of pear, bush peach and apricot become apparent. After a brisk, direct attack typical of a spirit free from additives, the body is rounded and subtle on the palate. Intense fruit flavours are balanced by the understated wood aromas in the finish. This is a characterful cognac made from the forgotten Folle Blanche grape, which accounts for less than 1% of the appellation’s current plantings.


Toasted artisanal bread with smoked, salted butter, carpaccio of raw boletus mushrooms, walnut oil and cocoa nib. The crust of the bread gives off a unique scent that suggests a blend of chestnut, honey and hay. Rumour has it that olive stones are used in the baking, which takes place in traditional wood-fired ovens. The scent is even more remarkable when the bread leaves the oven or is reheated. It struck me as an obvious match when I discovered Le Singulier’s aromatic richness.
